Twist on a Benni!
These aren't your average eggs benedict! They are so much better!! We have these almost every Sunday. Heavenly is the best word to describe these. It took us a few tries to get the order and timing of everything down. And poaching an egg is harder than it looks ;) but ohh is it soo worth it!
English Muffins
Avacado
Eggs
Bacon
Tomato
Green onion
KNORR Hollandaise Sauce
Deli sliced oven roasted turkey
Chop up green onion, tomato, and slice avacado. Cook bacon, let cool and crumble or finely chop. Poach one egg for each benni. Heat each slice of turkey on a skillet you used for bacon. Toast english muffin.
Assemble:
english muffin
1 lg slice turkey
3 slices avocado (or 5 if you're me)
poached egg
hollandaise sauce
Top With:
bacon
green onion
tomato
I sprinkle some paprika over the hollandaise sauce. And I always make this with hash browns.

My last project
I just finished my rag quilt! I did it for one of the girls at work. It was my first one, so there are some mistakes in it and I didn't have my mom to fix my problems with the sewing machine. I love the way it turned out though. Definitely going to be making a couple more! ;)
Lesson learned: It shrinks. A LOT. I ended up changing the pattern.

Love the way it turned out. There is a lot of pink happening here but I actually like it!

Arachnophobia
Spiders are scary! Ben always says I'm crazy for being so scared but it's out of my control. I even struggle with killing the beasts. I can feel and hear is squish and it just gives me the heebie jeebies! I think it's gonna magically put itself back together and come after me (like the skeletons in mario!). Anyway, it's not just me. I don't know what it is, but anything that has more than 4 legs is out to get me; I swear this is true.
